Hey beautiful readers!
I want to start out by apologizing the lack of new blog content as of late. Life has been a little hectic recently so my focus has been elsewhere. The hubs and I made the huge decision to build a house! So needless to say between home tours, working out details, and signing stacks of paperwork, I haven’t had much time for the blog. The choice to build a new house also means needing to budget, so it’s a good thing I have meal plan Monday!
Because I feel bad about my lack of commitment to the blog, I’m even throwing in a Paleo-friendly dessert for y’all this week! This week is all about easy, quick meals. Most of these can be made in the slow cooker, so don’t feel excluded if you don’t have an Instant Pot or just prefer to use a slow cooker! I will warn you, there are a couple meals this week that aren’t low carbohydrate friendly, like the Cheesy Chicken Spaghetti and the Chicken and Dumplings. If you’d prefer no carb, skip these this week. Otherwise, live it up a little bit!
Monday – Instant Pot Beef and Broccoli with Quinoa (can also use slow cooker)
Who doesn’t love a classic dish like beef and broccoli? This recipe from Carla at Adventures of a Nurse has few ingredients but packs a big punch! Trying to keep it Paleo? Replace the brown sugar with organic coconut sugar like this one from Wholesome Sweeteners (affiliate link).
In order to get some good grains in (and mix it up a bit), I like to serve this with quinoa. It’s not carbohydrate heavy like rice, but still offers a little bit of heartiness that can be missed with the cauliflower rice. I love dishes like this because the meat and veggies are already included, so just fill up a bowl and dig in!
Tuesday – Crock Pot Cheesy Chicken Spaghetti
This is definitely a comfort meal. Having a rough week or want the perfect dish on a rainy day? You can’t go wrong with this Cheesy Chicken Spaghetti from Lauren over at Lauren’s Latest. No, this is not a low cabohydrate meal. Whip this one up when you’re in the mood for some seriously spicy (but not too spicy), cheesy, deliciousness.
And the best part – it’s freezer meal friendly! Dump all of the ingredients except the cheese and spaghetti noodles into Gallon Size Ziploc Freezer Bags (affiliate link) and stick it in the freezer until you’re ready to make it! I know you’ll enjoy this one.
Wednesday – Instant Pot Thai Beef Curry with Cauliflower Rice
*Can also be done in slow cooker
You know I had to include at least one recipe from Michelle over at Nom Nom Paleo. I have been a huge fan of curry since college, so needless to say I was thrilled to find a recipe that checked all necessary boxes! If you like eating adventurously, this beef curry will be right up your alley. Hearty sweet potatoes and carrots perfectly compliment the flavors of the curry and cocunut milk.
Toss together some cauliflower rice while the Instant Pot does it’s thing. Separate it into oversized bowls, top with the curry and fresh herbs, and enjoy!
Thursday – Fall off the Bone Pressure Cooker Chicken
*Can also be done in slow cooker
My world got so much bigger when I realized how delicious whole chicken can be when cooked in a slow cooker or pressure cooker. A whole, cooked chicken means dinner for today and tomorrow (depending on how many people are eating, of course)! Keep it simple and serve with a side salad and fresh veggies. I like to get those steamer bags of fresh green beans and pop it in the microwave for five minutes, then toss them with a little olive oil, salt,and pepper. Even the boys eat them!
Shred any leftovers and use them in a stir fry, chicken tacos, or whatever else you’re craving!
Friday – Slow CookerTaco Soup
Sometimes, you just need a hearty soup at the end of a long day. There’s something about the macaroni elbows (*gasp* carbs!) in this one that wins me over every time I eat it.
This version of the classic Taco Soup comes to us courtesy of the ladies over at Who Needs A Cape. When I first delved into the world of freezer meal preperation, their blog was basically the beginning, middle, and end of my research. If you struggle with having meal options and hate coming up with dinner ideas every night, I highly recommend preparing your meals for the week on Sunday afternoons! Pop those babies in the freezer and take them out the night before you plan to eat it! Life is so much simpler when I plan my life this way.
But about the soup! This is indeed a slow cooker recipe. I’m sure it could also be made in a pressure cooker, but I haven’t attemped yet. Make it. Eat it. Be happy.

This four ingredient recipe is another one from the women over at Who Needs A Cape. Beef Tips and gravy is a classic, go-to meal in our house! I love it because you can serve it with mashed potatoes, rice, or switch it up with cauliflower mash and skip the carbs!
Serve it with your favorite fresh or frozen veggies for a well rounded meal.
Sunday – Leftovers! You know you have ’em!
Take a break from the kitchen and heat up some leftovers tonight! You know you’ve got some taco soup still stashed in the fridge!
Bonus Recipe! – Bacon “Nut”ella Brownies
As promised, the bonus recipe as my gift to you for being so MIA lately! Bacon “Nut”ella Brownies from Jennifer Robbins over at Predominantly Paleo. If these brownies don’t scream delectable, then I don’t know what does. Not only are these a great, Paleo friendly way to satisfy chocolate cravings, they have bacon on them! I’m pretty sure these are the best brownies ever made.
