Meal Plan Monday: Second Edition! March 20 – 26, 2017

Welcome, friends!

It’s time for the second edition of Meal Plan Monday! The first edition was a hit, so I’m excited to share this week’s round up of healthy meals. This list of recipes includes low carbohydrate, lean options for the oven or slow cooker. Some can even be made ahead and frozen for later! I’ll make a note of which recipes are great options for those who like to do meal prep on the weekend for the week(s) to come.

That’s enough chit-chat! Let’s dive right into the meal plan of the week!

Monday – Cheeseburger Stuffed Zucchini Boats

I’ve made these Cheeseburger Stuffed Zucchini Boats a handful of times and they are always delicious. The savory flavor of the stuffing definitely satisfies cravings for a burger, without the guilt! Amanda is 100% right when she says you won’t miss the bun at all!

Get some Alexia Sweet Potato French Fries (affiliate link) and you have an amazingly tasty, guilt free meal! So go ahead and whip these up, you won’t be disappointed!


Tuesday – Hummus Crusted Chicken

If you’re looking for a way to cook chicken breast without it getting dry as a bone, you’ve found your answer. This Hummus Crusted Chicken from Gimme Some Oven is one of the husband’s favorite dishes. And for good reason! Not only is it super quick to make and a one-dish meal, it’s really yummy, too! There’s a reason why this is one of my go-to healthy meal plan recipes.

Not a huge fan of hummus? Well, this dish will make you a believer. You can also use the flavor of your choice. I tend to go with garlic, but roasted red pepper or a spicier selection would work just as well. It’s also fun to play around with the veggies. I’ve used halved cherry tomatoes in place of the onion in a bind.

Wednesday – Sweet & Sour BBQ Meatballs over Cauliflower Rice (Freezer Meal Friendly)

I was so excited when my girl Audrey from Life Tastes Better Homemade sent me this surprisingly simple slow cooker recipe! Throw it in the Crock Pot or Instant Pot and call it done until dinner. Planning ahead? Put all of the ingredients in a Ziplock bag and freeze for up to three months!

Audrey serves it over rice, but it can easily be replaced with cauliflower rice, quinoa, or any other low-carb option. You can also sub out the beef meatballs for turkey or chicken! I love meals that include veggies right in the main dish, just pile it in a bowl and dig in!


Thursday – Sweet Potato, Roasted Onion & Quinoa Bowl with Tahini-Maple Dressing

Have you met Ali from Inspiralized yet? She is a genius. Seriously. She is the master of making rich, satisfying meals without the carbs. I stumbled upon her blog a couple years ago and I’m so glad I did. She offers everything from vegetarian, Paleo, and even Whole30 friendly recipes.

Her Sweet Potato, Roasted Onion & Quinoa Bowl with Tahini- Maple Dressing is by far my favorite. The combination of the roasted onion, sweet potato noodles and light, savory dressing is heavenly. This meal is vegetarian, but you can easily add roasted chicken or ground turkey to add some more protein if you prefer. I usually pick up a roasted chicken for an easy addition!

Friday – Sweet and Savory Salmon (Freezer Meal Friendly)

We all know it’s important to include fish in our diets. The tricky part is finding recipes that appeal to the whole family. Well, I have one that fits the bill! This Sweet and Savory Salmon from Thriving Home Blog is seriously amazing.

The first time I bit into this dish, I was blown away by the layering of flavors and how well they compliment the salmon. The green onion on top seals the deal. This is hands down my favorite fish recipe.

Serve it over rice with a fresh steamed veggies on the side or cut the carbs and go for cauliflower rice.

I promise you won’t be disappointed with this dish!


Saturday – Slow Cooker Green Chili Stew

Of courseSlow Cooker Crock Pot Green Chili Stew I had to throw in one of my own recipes! Green Chili Stew is perfect if you’re looking for a hearty, comforting meal without the guilt. Tender, seasoned pork mixed with potatoes, roasted red onion, and hatch green chili combine to create the perfect one pot meal. Serve it with some cornbread if you’re looking for a cheat meal or amp up the veggies and add some matchstick carrots and red bell pepper.

Sunday – Leftovers!

Take a break from dirtying dishes tonight! I know you have several servings of stew left or some salmon. So sit back, heat up some leftovers and feel proud of yourself for providing your family with healthy, yummy meals all week! I hope you enjoy these recipes. I’d love to hear what y’all think!
